Rhythms of the Night Dinner & Menu Guide
Dinner is included in every package and served before the show on the 5:30 PM departure. Here is the full menu, and what actually changes between Classic, VIP and Premier.
When you eat
On the 5:30 PM departure the order is dinner first, then the show. That matters if you were planning to eat beforehand — you do not need to. Arrive hungry.
Wine and an open bar are included in every package, and the bar opens on the crossing out, not on arrival.
The Classic & VIP menu
Classic and VIP eat from the same kitchen and the same menu. It is served as a spread rather than a set plate, so you are choosing across the whole thing rather than picking one main.

What VIP adds
Two things, and they are the only differences in the food itself. VIP gets a charcuterie platter that Classic does not, and a different dessert selection.
Charcuterie platter
- Serrano ham
- Salami
- Pamplona-style chorizo
Classic desserts
Sweets
- Mexican chocolate cake
- Neapolitan flan
- Banana pie
- Carrot cake
- Homemade cookies
- Mexican-style spiced coffee (cinnamon and brown sugar)
VIP desserts
Sweets

Everything else — salads, the cheese platter, all four mains, garnishes, salsas and bread — is identical between the two. What you are really buying with VIP is oceanfront seating with live music, preferential boarding and a designated theater section, for $36 more per adult. The charcuterie is a bonus, not the reason.

Premier: the Paco Ruano menu
Premier is not the menu above with better seats. It is a separate fine-dining service built by chef Paco Ruano — plated courses rather than a spread, served with champagne and a wine pairing, in its own area, with priority boarding and the best seats in the theater afterwards.
At $208 per adult it is $91 above Classic. The way to judge it is as a restaurant decision: if you would otherwise spend that on a good dinner somewhere in Vallarta, you are not really paying extra — you are moving the meal.

The Premier menu changes with the season and is not published in advance. Ask us when we confirm your booking and we will tell you what is currently being served.
Dietary requirements and allergies
The printed menu cards flag each dish against 9 categories: vegan, gluten free, vegetarian, egg, fish, nuts, shellfish, hot, dairy. We have not reproduced those per-dish markings here, because getting an allergen wrong off a scanned menu is not a mistake worth risking — if you have an allergy, ask us directly and we will confirm it with the kitchen rather than guess.
Tell us when you book. The site is on a cove with no road access, so the kitchen works from what was brought over that afternoon — a requirement that has not been planned for cannot be improvised on the night.
