When you eat
On the 5:30 PM departure the order is dinner first, then the show. That matters if you were planning to eat beforehand — you do not need to. Arrive hungry.
Wine and an open bar are included in every package, and the bar opens on the crossing out, not on arrival.
The Classic & VIP menu

Everything else — salads, the cheese platter, all four mains, garnishes, salsas and bread — is identical between the two. What you are really buying with VIP is oceanfront seating with live music, preferential boarding and a designated theater section, for $40 more per adult. The charcuterie is a bonus, not the reason.

Premier: the Paco Ruano menu
Premier is not the menu above with better seats. It is a separate fine-dining service built by chef Paco Ruano — plated courses rather than a spread, served with champagne and a wine pairing, in its own area, with priority boarding and the best seats in the theater afterwards.
At $229 per adult it is $100 above Classic. The way to judge it is as a restaurant decision: if you would otherwise spend that on a good dinner somewhere in Vallarta, you are not really paying extra — you are moving the meal.

The Premier menu changes with the season and is not published in advance. Ask us when we confirm your booking and we will tell you what is currently being served.
Dietary requirements and allergies
The printed menu cards flag each dish against 9 categories: vegan, gluten free, vegetarian, egg, fish, nuts, shellfish, hot, dairy. We have not reproduced those per-dish markings here, because getting an allergen wrong off a scanned menu is not a mistake worth risking — if you have an allergy, ask us directly and we will confirm it with the kitchen rather than guess.
Tell us when you book. The site is on a cove with no road access, so the kitchen works from what was brought over that afternoon — a requirement that has not been planned for cannot be improvised on the night.

When dinner happens
Before the show, on the 5:30 PM departure. You cross the bay, arrive at the cove, eat, and then move to the amphitheatre — so nobody is eating while the performance runs and nobody misses anything for the sake of a course. It also means dinner is unhurried in a way a pre-theatre meal in a city rarely is.
Drinks
Wine and an open bar are included in every package, and they start on the crossing out rather than on arrival. Premier adds champagne and a wine pairing matched through the courses. For a party that would order several rounds over a long dinner anyway, this is a larger part of the ticket price than it first appears.
Dietary requirements
Tell us when you book and we will pass it to the operator. Vegetarian and common allergies can generally be accommodated with notice — and notice matters here more than at a restaurant, because everything served at Las Caletas arrives by boat. There is no adjusting at the table.
Which tier should you eat on?
If the food is the reason you are going, Premier is the only tier that answers that — it is a different meal, not a better seat at the same one. If dinner is the thing that happens before the show, Classic already feeds you generously and VIP changes very little about the plate. The tier comparison covers everything beyond the food.
